When I wrote above post it was still funny.
Yesterday evening I cut myself into my left thumb so bad I didn't even "haha another one" about it because it left me rattled; just short of "do I need to go to the ER with that" level.

How DO you wield really sharp knives without constantly cutting yourself?! (I think I got a solution for it that seems to work on the frozen fish I cut every day: I can hold down the thing I'm cutting using a "stamp" that came with my grater. Time will show.)

My mother: "Or you could use a blunt knife again."

Yeah but that used to hurt my shoulder and ellbow because I had to press down so hard. And I was always anxious I would slip one day and REALLY stab myself that way. The sharp knife really goes through the frozen fish so easily! (And through my fingers.)

(Yes the cats get sushi every night. That's not negotiable.)

I considered that! I have gardening gloves that should do (they are thorn proof) but I don't think I could properly work like that because they'd make me clumsy :') I think that's more for if you pare huge slabs of meat, not cut fine slices.

On the other hand, my solution with that plastic stamp isn't very intricate either :'D

@Antimony Spouse has a history of making "finger soup" once, so we recently got him a mandolin food slicer that came with a knife glove like this. It works really well, is thin enough to use and still be not too clumsy, and no injuries since.

@JillsJoy [nerdjoy.social] Oh, good! I'm going to bookmark that glove :'D

Fortunately I've never ever hurt myself on the grater/mandolin because that must hurt so bad, AAAARGH D:

Oh no, they seem to only sell within the US anymore :'|
I think I'll just buy new gardening gloves on Monday, for cooking purposes.

@Antimony ah, that was just an example, not a specific brand recommendation. Sorry for not making that clear.

@JillsJoy [nerdjoy.social] I couldn't find anything similar on Amazon, so I'll go with the "garden variety" :')

I know now that you can buy actual medieval looking armored gloves though, for whatever reasons :'D
