Better idea: store sexes instead of genders. Less likely to accidentally exclude someone and also isn't going to expand (as far as I'm aware).

The link you just provided is about gender not the biological sex of a person. These are two different things. Gender is a social construct, the biological sex not.
But you were right, I was wrong. The biological sex is not binary. There are also intersex (https://en.wikipedia.org/wiki/Intersex) people.
In general I believe it's pointless to ask for someone's gender, because it's a social construct and therefore there can be (rightfully) a virtually limitless amount of them.
